2010 Cave Spring Sauv Blanc

I love Sauv Blancs, they are very food friendly. There aren’t a lot of Sauv Blancs from the Niagara Bench area. Pale in color with a mild minerally nose. On the tongue there is a hint of effervescence. On the mid pallet the wine has some strong grassy notes, some strong acidity as well as some minerality to match the nose, as well as some flint. The wine has a long finish that builds in the mouth with the acidity lingering. The alcohol is quite noticeable on the finish. Careful not to breath in or you will be choking. I would give it an 88 or so.
